Doisneau began to document the lite of the "dawn workers" in Les Halles market in 1945.
With the city plunged in the aftermath of the Second World War, these analog shots reveal the humanist dimension of Robert Doisneau's work. The photographer captured with empathy the working-class faces of "the belly of Paris": fishmongers, cheese sellers, greengrocers and, here, a butcher at work surrounded by carcasses. More than the picturesque aspect of this portrait, Doisneau seems to have been enchanted by the motif of flayed cattle, which fascinated many artists such as Rembrandt, Chaïm Soutine and Francis Bacon.
